In some ways, dry aging is "spoiling meat" but in a controlled manner. The attempt (for the most part) in dry aging, is to remove water from the meat which (after cooking) will provide a more intense and concentrated meaty flavor. This is why dry aged meat tastes better than "fresh" straight up meat.
