When I first played FFVII as a kid I happened upon the run feature and found out I could get though fights faster. That obviously didn't go well for very long.

Killing ruby weapon requires a lot more grinding. Once you get the greens and the stables it's just a matter of spamming load and reset for half an hour or so. Racing Chocobos didn't do anything to improve your chances.

That's bad pacing, not something inherent to turn-based. A lot of action-baased RPGs have felt a hell of a lot more grindy to me, simply because I could switch off and let my cerebellum do all the work.
