I've never heard the Hulk commentary, but IIRC Ang Lee and James Schamus spend most of their Crouching Tiger, Hidden Dragon commentary making fun of their own movie.
The first couple of King of the Hill seasons have a few in-character commentaries as well.
That "Homage-o-meter" bonus feature was first introduced to Pegg/Wright/Stevenson DVDs with the second series of Spaced.

When I was about 8, I saw Richard Williams' 1971 animated adaptation of "A Christmas Carol". Unusually for an adaptation of the story, it includes the bit where the Ghost of Christmas Present shows Scrooge the representations of Ignorance and Want. That bit terrified me.
