Life hacking tip: You can increase the size of the holes in a box grater (slightly) by placing some needle nosed pliers in each hole and bending the cutting surface outward. Don’t use the pliers as pliers (i.e. don’t clamp the hole and try to form anything), just stuff the closed pliers in the hole and wiggle them…

Raised in the Deep South here too. I used to eat sliced tomato and mayo sandwiches when I was a kid but that was when tomatoes still tasted like tomatoes. Tried one not long ago and it was like eating wet mayo flavored bread. I still eat nanner/mayo sandwiches to this day.

That does sound delish and I could see how it would work. Especially for tacos de pescado. All the handmade flour tortillas here in Guatemala are thicker. The corn tortillas are much thicker as well which I’m not a big fan of as they’re almost doughy in texture.
