A few points - definitely check these if you have them, and get them returned. Pay attention to the teeth on the stand bar too, I’ve seen some of them that are very shallow - this may be the thing causing the recall, the forming dies for the teeth are getting worn on the tooling.

As a dad of two kids and owner of an Odyssey for 4 years (and counting), I have removed 1 of the 2nd row seats maybe twice. To remove the whole 2nd row can only be done if I remove both car seats - not impossible but pain. So stow and go is useful, but the lack of it is not a deal breaker.
It’s a family van, not a work van. It is meant to carry people, not cargo. No one will care about this for the one time they have to remove the seats in the 10 years of ownership.
