I would have to agree with you on that one. Why else would they specify crispy skins, if they are to be taken off and discarded? Why else would you need to strain it multiple times, if not because the breading breaks down over time?

Project cars are just that, projects. Doesn’t matter if the project is learning how to wrench, restoring a tired classic to it’s former glory, or making an already restored car a little easier to live with by updating it with modern equipment (I love retromoded muscle cars).
Same for cars. Drive it, don’t store it in a garage for 30 years and drive it 100 miles.
