As Disney-style characters. They were already cartoon characters. Because japanese animation is still cartoons.
I’m not going to pretend that I’m not biased towards good/cool looking characters. As long as they are cool enough, they can be quite ugly though. Zangief for example, is not a pretty character.

Yes, but. Clang got in US$500,000 and had less experienced devs trying something completely experimental and only a prototype. Deliverance picked up £1,106,371 (about 3x as much) and has some more experienced devs trying to do something a bit less experimental while also creating a finished game.
The main character has females that fawn on him, but... He’s undead. He has no emotions and no bits to use, so he pretty much ignores any advances. There is about 10% fanservicey harem stuff to 90% other.
The main difference is that Outbreak Company while fun was ultimately a shallow harem fantasy and GATE (so far) is a slightly deeper harem fantasy (if only because there are many women, not that anyone actually has a harem).
It’s definitely not the same world. Only his guild fortress turned up in this new and apparently “real” world. Part of the fun is for the main character to figure out what to make of things.
So when you pirate the game, you get to fight a boss that is Harder, Better, Faster, Stronger?
That’s a pretty damn good list. There are a couple I’d replace, because I’ve never played them, but otherwise its very solid. If I did replace some, it would be with more niche classics like Master of Orion (I or II) and/or Master of Magic.
I was rather entertained by the bit where she pounces right onto a guy from above and simultaneously stabs him directly in the neck. She hasn’t just gotten over her fear of murder, she’s gotten really good at it.

To be fair, with Starcraft 2, they’ve invested extra years of time to create better balance in the multiplayer as well as extend the single player campaign. With this game, I’ll be surprised if we see more than DLC missions released after the fact.
Not everyone has the reaction speed and the long-term concentration. I never have and never will complete this hardest version of the side quest. I could possibly, after many hours get good enough to luck through it once. I’ve tried that before and it didn’t happen, but maybe with just a few hours more... Ooh, new…
