When I was a server, I had to enter the total amount signed for on the credit card. If their math was wrong, I would just go for whatever number gave me the biggest tip. So in this case, I would’ve entered $501.10.

Having worked as a server in several restaurants, standard practice (and possibly due to the law) is that the total line trumps the tip line, so if a customer leaves you a $100 tip but the total they write and sign for only reflects a $50 tip, then you’re boned.
