I have had this done with Sprite Zero, instead of the normal Sprite, it worked out well, tasted fantastic.  Cut down on the sugar and you couldn’t tell the difference, now if they can just make a sugar free syrup that doesn’t taste like crap.  (Note - I can’t eat a lot of high sugar foods, makes me very sick)

Regular club soda or tonic water will work. If you have a Soda Stream or something similar, you can simply add plain fizzy water to the mixture for fluffy, non lemon-lime pancakes. If you make your own syrups and tinctures, you can also experiment by adding any flavouring you like to the carbonated water.

If you add a small pinch of salt to the mix, it will taste even better.
