I agree, but in my case it mostly has to do with wanting to experience the traditional food, prepared in the traditional way with the correct ingredients, before "innovators" get their hands on it.
I'll follow a recipe as if it's Holy Writ the first time I make it. After that I make adjustments/improvise.

Lawl. Before we relocated we were lucky enough to be less than a mile from a huge Asian supermarket and I could NEVER. figure out how the merchandise was ordered in the aisles—or if there was any order at all.
This meant I had to walk the length of every single aisle in that huge place to make sure I didn't miss

That raised my eyebrow as well. Boxed pasta just does not go with Asian, IMO.
And if you can access Sriracha you can surely access appropriate Asian noodles.
