I'd say the first couple novels are a little too influenced by Douglas Adams and Monty Python. They're mildly entertaining but not very cohesive.
IMO Sir Terry got into his stride beginning with Mort and just kept getting better.

Near the end of Night Watch I literally had to put the book down on the table and cry for a while.
But, while generally you can pick up any Discworld novel cold and enjoy it, you really should read the other Watch books before Night Watch, because the better you know the characters the more impact everything will have.
