Worked in the industry for 6+ years in St. Louis. There’s a ton of turnover in restaurants. If you’re a decent waiter, busser, bartender you have very little problem finding a job. And work at a half decent restaurant your take home isn’t bad. It’s not unreasonable to earn $50k+ a year as a waiter.

But the owner is collecting from the waiters. If you can figure out the owner is doing it you can call it out. If the owner doesn’t stop doesn’t stop you quit and let the community know.

What quality of restaurants did you work in? I worked 6+ years bussing tables, not even waiting tables. On tips alone, never made less than $10 an hour. Add in the little bit of hourly $, helping out the bartender and doing other people’s side work and I’d come in around $15 an hour per night.

It only takes simple math to prevent tip theft. First you figure out who gets tipped out at the end of a night (waiters, bussers, runners, bartenders, etc.). Next, each waiter tells you how much they collected in tips for the night. Figure out how much 1 person in each group gets tipped out at the end of the night and…
