Vitamix soup is my go-to quick dinner during the summer when produce is nice. Pre-roast veggies on the weekend, pull them out of the fridge and chuck them in the Vitamix with some veg stock, serve with bread. Boom! Dinner is done. Salsify is delicious! It’s strange that it’s not already common in Britain, as it’s pretty easily found in France (which is the only place where I’ve eaten it). I’ve never come across it in the US though.
