Zombie Survival Guide (mostly a parody, with a mildly serious tone to it), then World War Z (a really serious fake oral history of the zombie war), and then "Recorded Attacks" (graphic novel form of the history section of the survival guide, which just sort of stripped away the whole "Funny haha" part).

I laughed maybe twice over the course of the 90 minutes and thought someone was pulling my leg with that "ending". No explaining in the world would have changed that. But then I simply watched it again a few years later, and laughed more. And then again, and again. So funny :)

Cabin in the Woods. The last scene where the predictable plot gets smashed into pieces and the entire planet gets destroyed? Brilliant, especially for a movie that already subverts the expected plot the entire way through.
Just because it's gonna piss some people off, I'm gonna say this one:
Not necessarily a plot twist, but (in my opinion) one of the most brilliant plot resolutions ever. I've consistently witnessed first-time viewers burst out laughing with joy at how clever it was.
I remember having a lot of fun with this one on DVD, going back to check the clues.
