And he doesn’t even have the decency to be embarrassed about any of this, leaving the rest of us to feel humiliated by his behavior.

What makes you think it has to be about evolution or whatnot? Some people are vegetarian for health or environmental reasons. Eating seafood is much worse for the environment than eating fungi.
