I think mentioning the Jedi in this context is actually very okay. It’s very clear the armorer doesn’t have a full grasp of what they are, she just knows the legend of what the Jedi were - and with the major history the Mandalorians have with the Jedi, forgetting them would be a seriously silly choice.
