I think the producy should have a couple hexidecimal boxes so you can put in your own colors. This user input would just add the colours to the CSS so you could have any colour you wanted.

How can you make sure its your default signature? The comment from wiseassoffice is ok for 1 email but soon as you send draft it goes as the original email, in effect nothing is left in the draft.
