Why did you ignore Jo Martin, who was really the first black Doctor Who, and only the second female Doctor. I get that Ncuti Gatwa is the first black actor to get an entire season dedicated to them, but Jo was in four episodes and is clearly cemented as an actual Doctor.

Roti or tortillas work ok but try roasting whole large chilies, unpeeled garlic cloves or halved onions this way and you’ll see what a mess it makes.

Have you ever experimented with adding miniscule amounts of baking soda to caramelizing onions to accelerate the process? I find it works and really doesn’t take much to make a significant difference cooking time without impacting flavor.
