Matfer Bourgeat makes the best carbon steel skillets and sheet pans IMO. The handles are welded on so there’s no rivets and the smooth finish of the steel takes seasoning very quickly, leading to a near non-stick surface faster than any other carbon steel or cast iron I’ve used.

I always buy jumbo eggs, based in some sort of rebellion of my mother always buying the cheapest smallest eggs the store had at the time, and they just work nice for fried eggs. One added bonus, jumbos are most likely to have double yolks. One time I had an entire carton of doubles.
