Toum has a far higher ratio of garlic to oil, and when made properly is absolutely epic. To me part of the trick with toum is getting the right variety and freshness of garlic. I highly prefer it with a hardneck purple stripe variety that’s very fresh, so fresh it’s a pain in the ass to peel.
