Because if there’s one thing you never do as a cyclist is waste the opportunity to take advantage of a descent. Also, brakes on bicycles are marginally effective at high speeds, so riding the brakes to stay at the same speed as the motorcycles and cars will lead to the rims getting warm and a potential blowout.
