IT IS TERRIBLE. I feel like absolute shit. Thank god for the rain the past two days.

Greens are properly cooked with ham hock. ;) Bacon is nuevo. But there are certain things that need hamhock or bacon (greens, beans) to be truly southern, and others that don't (cornbread, bloody mary).

Southern definitely. Biscuits were tradionally made with lard, but now most people use butter or (blech) vvegetable shortening. Also the lower americas. Traditionally, flour tortillas are made with lard, as is real cuban bread (the addition of lard is what makes cuban bread different than french, really).
