I’ve wondered this too - the final two seasons have easily been the weakest (and it isn’t just because the books have been passed by; much of season 5 and all of 6 was past the books while still being quite good - hell, I’d argue 6 was one of the best seasons) - they tell more than show, they have things develop too…

I think there’s room for Arya to consider what’s next for her after bagging the ultimate kill. I could even see the Hound being the one to show Arya the perils of letting revenge consume you. Of course, none of that narrative work actually happened on screen.
What are the odds that Jaime not only runs into Euron, but get to Cersei just in time so they can die together?
So Arya gives up her quest for revenge, which was the basis of her entire storyline, after a 5 second convo with The Hound? OK cool. At least there wasn’t other rushed stuff like Euron running into Jaime in the middle of the battlefield.
