The gigafactory will make batteries for 500k cars per year, that’s more than 4x the total number of electric vehicles sold in the US last year. There are also other companies making batteries and there will likely be more gigafactories in the future, production should be fine.

China is dramatically loosening their monetary policy and letting the yuan approach where it should be based on the open market, in another year or two they may not manipulate the value at all. But up to this point your argument is fair.

If the share of gasoline cars in the market place gets that low that it is “a drop in the bucket” mainstream manufacturers won’t produce them anyway. Maybe some niche supercar companies would still want to make them, but I imagine there would be room for exemptions like that in any law banning ICE cars.
