If you use a DS18B20 for the temperature sensor, the whole hardware design will be much simpler. You just need the DS18B20 ($0.50 each) and a 4.7k pull-up resistor (under 1 cent each for lots of 100).

Which programmer do you use? I’ve wanted to get some 3.3V Pro Mini but the programmers I found only work on 5V (even though they claim to work for both 3.3V and 5V).

Pro Micro (my personal favorite) has a micro USB and can be programmed over USB, no serial programmer needed.

Arduinos don’t come with an Ethernet port standard. Why would it have PoE? Besides, PoE makes deployment easy, not development.
