I tried to sniff my WiFi in promiscuous mode on a Windows machine using WireShark, but all I could see are packets to / from my machine and broadcast packets. After 15 minutes on Google, I found out that I need either : AirPcap, some custom drivers that may or may not work, or a Linux machine.

No. The cell phones know where they are from GPS (eventually - it will take multiple minutes without cell tower augmentation), but there are no towers to connect to, so cell phone companies won't know the phones are even turned on, let alone where they are. A satellite phone would work, but they are extremely rare.

Confused - do you mean stairs truck, or jet bridge / aerobridge? Jet bridge joins the terminal to the plane, so there's no need for a bus. But if the plane is late and parked away from the terminal, they bus you over to where the plane is, and you climb the stairs to board.
