This works better with some foods than others. Freezing ruptures the cell structures of vegetables and meats, so the texture is never quite the same once they’re defrosted. Starchy foods like potatoes and beans freeze well, as do blended soups that don’t rely on the texture of the ingredients to be tasty.

A challenge: oil and grill halves of Romaine heads and serve with bacon, cherry tomatoes, blue cheese, croutons and a creamy dressing (maybe with a bit of umami) - THEN tell me that lettuce is bullshit.

One easy way to deal with this texture issue is to cut the scallion at a 22 degree angle (if the scallion is horizontal in front of you, you’ll thinly slice it at half of a 45 degree angle) - the link above refers to them as “horse ears.” You’ll need a sharp knife and a good sense of where your fingers are (or were)…
