Non stick is fine until the coating is gone, then you're usually left with a bare aluminium cooking surface, which is unacceptable. All Clad is pretty but the 5 layer stuff is largely a gimmick. 3-ply is about all you need: Layer of convection compatible stainless, core of aluminium, cooking surface of stainless.
