I agree with you. Although I would point out that test kitchens have found that when olive oil is cooked, it basically becomes/is the same as vegetable oil. This just seems like a simple simmer so I would lean towards olive oil, but it’s cooked so long, you’ll probably get the same results and taste using canola.
