1) Smarter than he was/is portrayed.

What’s the problem with that? Get a nice sear to have some char and lock on the juices them finish it in the oven to regulate the internal temperature more precisely. This is how many fine dining establishments cook steak.

Well, that’s a perfectly valid way of cooking steak — searing it in the pan and then broiling it at 450-500 degrees just a couple of minutes on each side to get it medium-rare.

I mean, there’s really nothing wrong with searing a steak and putting it under the broiler for 2-3 min each side. It will flash cook and come out a very good medium-rare if you take it out in time. This is exactly how some steakhouses like Ruth’s Chris or Fleming’s will usually cook their steaks.

Eh, this is similar to how my husband cooks steaks. Fry in a screaming hot cast iron with grape seed oil to get a sear and then in a 500 degree oven until a few degrees below med. rare. Then rest for five minutes. They are excellent. Good char on the outside, juicy red center.

That is a legitimate way to cook a steak. You heat the pan super hot, Sear the steaks, and then put them in a hot over to finish. But it’s only supposed to be a few minutes, or you ruin the meat.

If you do it right, you get a nice, seared outside, but pink and juicy inside.

Actually, you can make a great filet with a cast iron frying pan. Sear it on once side in a super-hot pan for about five minutes. Then flip it, and put in a 450-500 degree oven for 7-9 minutes, for rare to medium-rare. Pull it out, let it rest under a tent of foil and enjoy.

That’s a fine way to cook a steak if you know what you’re doing.
