I think paying employees shit wages has more to do with power than with money. They want downtrodden demoralized and powerless employees. Even if it makes the product suffer.

Because it's all a lie. Labor costs in any restaurant run 20-25%, but this includes management, cooks, etc. LC for just servers and BB, anyone making min is probably 10-15%. So a 15-20% increase in min wage only effects the restaurant costs by 1.5-3.5%.

Remove the leeching class rich from your business model, and suddenly things are feasible.
