There is a BBQ Joint in texas I stumbled on ages ago.....mikeska’s? I-10 just east of columbus.....I am probably butchering the name. I try to swing thru at the start of Deer and Turkey seasons; all of the local hunters sell to them and they process it on site and cook it up in the restaurant.

Considering that the “cooks” in a lot of small food places are as much entertainers as they are cooks I sort of feel bad for the two or three guys that arm put out of work. Then I remember they are basically street performers who’s act is trying to make boiling noodles interesting.
