Blue cheese makes my face warm (not in an unpleasant way) so I generally avoid it. I will however make a beeline for the Champignon.

With the aforementioned wine, I finished the remainder of my Havarti. I love Havarti, esp with dill. It was delicious to be sure, but I haven’t found anything to beat Pacheco. Any recommendations?
