for me it’s cool because the same dish in spirit looks and tastes completely different depending on what style of cooking. it’s similar to how Mexican food is made, depending on the region of the cooking!

depending on the style of dinuguan, it can be spicy or not. the two sides of my family are from different parts of the Philippines and make the dish differently. The main parts are the same but my did makes his a bit thicker while my aunt (mom’s sister) makes hers a bit soupy. that said, neither is very spicy because

we’ve had a machine since I was a child. and it didn’t require a special occasion to fire it up either. there have been multiple occasions where my dad would turn it on at 5pm in the evening because he wants to sing. then it became a contest.

First thing Anne, I you’re amazing! Second thing, I can vouch for this “let’s make the white person eat the balut” but I’ll go a step further and also submit the “let’s have them try the dinuguan and say it’s chocolate meat”.
