Never heard of smoked malt being a defining part of a scotch ale in the US either (according to Wikipedia, that's a French thing). Typically it's a strong (7-9% ABV), malty pale with lots of caramelization (either through long boils, decoction mashing, or boiling down part of the wort).

Wasn't aware of an obsession w/mayo being an American thing. It's mostly used for cold-cut sandwiches and egg/chicken/potato salad here. In Europe they use it for french fries, and in the UK they put it on salads.
