I agree with you and have spent hundreds of hours (and dollars) perfecting mine. They loose way less moisture, retain more flavor, and to boot — you can make medium-rare ribs and are safe to eat — the meat is pasteurized, essentially. So if you haven’t tried, don’t knock it.
