EV training is easy in Sun Moon. The Power items you buy from the Battle Royal now give 8 points of their given stat for each Pokemon, SOS Pokemon give double EV (including power items), and adrenaline orbs pretty much guarantee a chain. Only need 14 Pokemon in a battle to get 252 EV of a stat.

I think EV training enriches the game even if you aren't super into it. It's nice that Pokemon gain different strengths and become unique as you adventure through the world. I also like that it means you have to make a concerted effort to train up specific stats, and you can't have it all.
