I noticed some lag on my 6-plus with 10.3.3 but after upgrading it seems to have smoothed out. What I was seeing was a delay or screen stutter when scrolling quickly in Twitter or Safari. The 11.0.0 build seems to have smoothed that out.

I think you need an email client that you can set as primary in order to disable the metro app. When I started using Outlook, it opened up on the desktop since that's the only place Outlook works currently.
