Well it depends what elements of reality a film maker wants to reflect. There are no doubt plenty of white construction workers in Texas - why not reflect that? Literally every other character is white, so your point is moot.

The choice isn't between an all white cast or a mostly white cast with one hispanic character who owes their current position in life to a white lady. People want representation, which means non-white characters who have agency of their own.
