Another underutilized spring bloom is that of the redbud tree. Pick a handful and throw them into a salad, pickle them or just eat them right there.  They are delicious and a great source of Vitamin C.

The dealer is supposed to QC them when they arrive before selling.  Maybe that was the case with the one you looked at.  Certainly was not the case with mine.
