Of course you can do this. You can do this with Windows and Mac, too. The benefit of using linux is that you can set it up so it uses very little resources, meaning it will be in this sleep state much more often.

Because running iTunes on Linux doesn't really work. I think there was a version a few years ago that was ok, but that's about the best it's been. The reason people bring this up is because you'd be much better served identifying your needs and seeing if one of the many linux native music managers can get the job done.
