Actually it looks like they are on wet sand, not pavement, so I don't think he's too injured (unfortunately).

I think "vast majority" might be an overstatement. I've definitely worked at places where I tipped out based on sales, but I've worked at a lot of places (especially in the past five or six years) where tip out was based on what I earned— either a percentage or on a point system in a pooled house.

20% is standard, now? When I served back in the late 90's, 15% was standard, and 20% was for excellent service.

I am pro-tipping and pro-tipping generously but 30% as a minimum is nutty.
