I’ll take the croissant thank you. Croquette’s have a homogenized quality to them - tasty no doubt but for me they lack the gastronimic delight of a stuffed croissant. For those that would rather not deal with the dough it is quite easy to find a good quality croissant dough, and as you say, adapt, experiment.
