I dunno, from my POV Elliot's mental state was the narrative focus. And to do a good study of someone who's had a complete mental fracture, to convey a struggle with an anarchistic alter ego, you need that time. Everything else may have seemed aimless but gotta set the stage with the pieces somehow.

I don't think the portals are traditionally fixed. The Demogorgon will break through into our reality wherever he chooses, and when he leaves, the breach "heals" back up. I think the breach in the lab however has been purposely kept open by the scientists and such, so that they can traverse in (and out, if they can).
