My wife and I did this a few months ago, but cut out Phantom Menace entirely. Narratively it works wonderfully (nothing in Episode I really needs to be seen, to be completely honest) and Return of the Jedi is more poignant having just watched Revenge of the Sith.

This reminds of the Seinfeld issue with race. You have writers here who spend their entire lives without any meaningful relationships with people of color, so of course they don’t write them into their work: they literally don’t know how.
