I wish ISO 8601 would just become the worldwide standard to avoid confusion with dates. It makes sense and is easy to remember big->small. But hey, it’s logical so of course some countries have to be against it..

This. I’m not a pilot, nor do I know any pilots but what you said seems like common sense. I don’t get in the car and drive if I feel I’m not able to do so safely, so I would hope a pilot wouldn’t hop in a plane and take off unless he felt it could be done without risking himself or his passengers.
