One of the problems with well-done filets is that they take *FOREVER* to cook. That's why lots of places will butterfly cut the filet - it's hard to cook the filet well-done without burning the living hell out of the outer crust.

I actually agree. My only qualm is when people order things well done, then complain about the texture. You want your filet well done? Idgaf. You scream at me that it's too tough/chewy? No.
