One of the problems with well-done filets is that they take *FOREVER* to cook. That's why lots of places will butterfly cut the filet - it's hard to cook the filet well-done without burning the living hell out of the outer crust.

I actually agree. My only qualm is when people order things well done, then complain about the texture. You want your filet well done? Idgaf. You scream at me that it's too tough/chewy? No.

While the ordering of really, really well done steak and a bowl of cheese is odd, the way the restaurant treated him is horrendous. I like my steak really, really, really well done. Which is why I never go to steakhouses, because I can overcook a cheap piece of meat at home and not offend anyone.

The main thing I'd worry about would be data-gathering. If the form has no M/F/etc. on it, doing definitive analysis of whether X group is underserved by Y government agency becomes more difficult.
