It is amazing how many people don’t give their wastewater a second thought once it goes down the drain. Same with just about every type of garbage. There is always some unfortunate person that has to deal with it on the other end, at least a lot of them make decent money to make up for how horrid it must smell.
Grew up in NYC, can confirm. Garbage disposals were a magic thing other places had. My mom, being who she is, collects compostable scraps and schleps them to the Union Square farmers market, and has been since the 80's.
