Apple Pay (and Android Pay) is just a way to use the iPhone on the contactless NFC payment terminals built into modern credit card payment terminals. Any terminal that has the NFC logo (which is an industry standard) can take Apple Pay or Android Pay.

Apple Pay is for either using credit cards at NFC terminals (in place of swiping your card through), or alternatively for personal payments between two people through iMessage (although everyone I know uses Square Cash or Venmo for this already).
